Simnel cake has been around for hundreds of years and was originally made during Mothering Sunday and associated with lent. The cake is now widely eaten on Easter through the UK. Traditonal round simnel cakes are decorated with 11 marzipan balls, symbolising the 11 apostles, excluding Judas. Fitzbillies offers a simnel bar cake.
